The above quotation exemplifies what I believe brewing is and the guiding perspective of every beer. Fermentation is at the mercy of the yeast. it cannot be controlled only ushered to a drinkable result. I seek to embrace the uncontrolled destruction of both raw materials and conceptions of what beer should be, and in doing so achieve something new and hopefully revelatory.
